Quinoa Porridge


Quinoa Porridge

½ cup uncooked quinoa
1 cup water
½ tsp cinnamon
Pinch of salt
½ cup low-fat milk or unsweetened soy milk
1 small apple, diced (keep the skin of you want)
½ cup blueberries or sliced strawberries (I used whatever I have – raspberries are good)
¼ cup walnuts or pecans
1 tbsp maple syrup

I soak the quinoa overnight and rinse it in the morning. The recipe doesn’t include this step, but I do it because I heard with was best to soak and especially rinse quinoa

And quinoa, water and cinnamon to small pot and bring to boil. Reduce heat, cover and simmer for 15 mins (or until most of the water has been absorbed)

Add milk and simmer an additional 10 mins, uncovered

Stir in apple, berries and nuts. Let sit, covered for 10 minutes before serving. Drizzle with maple syrup (I like to put it in with the fruit and let it sit, and I probably put more than 1 tbsp)
