Crock Pot Split Pea Soup
1 pound dried green split peas, rinsed (450g)
2 medium carrots, peeled and medium dice
2 medium celery stalks, medium dice
1/2 medium yellow onion, medium dice
2 medium garlic cloves, minced
2 fresh Italian parsley sprigs (optional)
1 bay leaf (optional)
1 Ham (about 1 pound), cubed
4 cups low-sodium chicken broth
2 cups water
salt & pepper to taste
a few sprinkles of crushed chili peppers (optional)

Arrange the split peas in the slow cooker in an even layer. Arrange the carrots, celery, onion, garlic, parsley, and bay leaf over the peas in one even layer. Place the ham pieces on top of the vegetables. Pour the chicken broth and water into the slow cooker and season with salt and pepper, and crushed chilies. Cover and cook until the peas are very soft (Low 8-10 hrs OR high 5-6 hrs) . Stir to combine. Taste and season with more salt and pepper as needed.
