Italian Sausage and Penne

Italian Sausage and Penne

4-5 Italian sausages; spicy or mild and sliced in rounds. Costco brand is the best.
1-2 garlic cloves
3 cups Chicken broth (knorr cubes are preferable – use 3 cups of water to one cube)
1 head of broccoli, cut in florets
1 pepper (red, yellow, orange, whatever you like)
Dried basil (about 1-2 tbps, but add to taste really)
Crushed chilies (to taste, can be omitted if you’ve chosen spicy sausages)
Freshly grated parmesan cheese (to taste, I usually sprinkle generously on top then toss)
About 6-8 cups of cooked penne noodles

Cut the sausage into rounds (this usually works best when the sausage is partially frozen)
Fry in a deep skillet. When sausage is almost cooked, add the garlic (at the end so it doesn’t burn)

At this point I like to be adding my pasta to the boiling water, so it is all ready at the same time

In the skillet add enough chicken broth to cover the bottom of the pan. Add the vegetables and put the timer for 9 minutes on medium heat. The liquid will steam the veggies and be a “sauce” for the pasta. If the liquid runs out, add a bit more .

Drain pasta, add to the pot and toss everything together. Add the basil and crushed chilies. Sprinkle with Parmesan cheese (be as generous as you like) and toss again, then serve!
