2 pkgs boneless skinless chicken thighs or breast
1 tblsp butter
1/2 cup minced fresh onion
2 large garlic, minced
1/4 cup dijon mustard
1/2 cup liquid honey
1 teasp curry powder
2 tblsp mango chutney
In a medium to large sized pot, saute onions in butter, a few minutes till soft. Add garlic & saute just till fragrant. (Do not brown) Add remaining ingredients except chicken & stir together. Keep the heat under pot just at warm. Add chicken, stir, & let sit a few minutes. Remove from heat.
Preheat oven to 350 – place chicken mixture in a 13×9 ovenproof dish & loosely cover with foil. Bake approx. 35min – remove foil & continue baking another 10 min (approx) till golden and cooked through.
