In a saucepan heat 2tbsps of oil over medium, cook 2 leeks (thinly sliced) and 1 onion, chopped. Until tender (stirring occassionally)
Once veggies are tender, add:
1lbs potatoes peeled, chopped
4 cups of vegetable broth
and simmer…
Once potatoes are cooked, starting moving batches to blender and blend until creamy
Transfer back to sauce pan and bring to boil
Reduce heat add, 1 1/4 cup of 35% cream, salt n peppa to taste, and simmer 15 mins
Then finally’ add fresh chopped chives to your taste.
Alternative, you dont need to blend 100% until creamy if you like chunks of potato leek.
