4 white fish fillets, about 100 g each (I use cod, Tilapia would work well too)
3 tbsp butter
1/4 cup finely chopped onion
3 tbsp flour
1 cup milk
3/4 cup grated cheddar cheese
1/2 tsp salt
paprika
Arrange fish in a single layer in a buttered Pyrex. Melt butter in casserole. Add onion and flour, saute 4-5 minutes.
Gradually pour the milk over medium heat, stirring until thickened. Turn off the heat, stir in cheese and salt. Coat the fish, then sprinkle with paprika. Bake at 425F 10-15 minutes.
Serve with any vegetable or over white rice (asparagus, broccoli, cauliflower ..)
