Butter Tarts


Butter Tarts

1 cup currants

½ cup butter
3 tbsp cream or milk
1 ½ cups brown sugar
1 ½ tsp rum flavoring
1 tsp vanilla extract
2 eggs

Pour boiling water over currants and allow them to stand until soft (10 min). Drain well.

Melt butter, add cream, brown sugar, rum & vanilla flavoring.

Add currants. Stir in eggs.

Fill tart shells.

Bake 375 F for 15-20 minutes or until pastry and filling are golden.
