4 tbsp butter
3 large Apples, peeled cored and sliced into 1/8 slices
1/4 cup brown sugar packed
1/2 tsp ground nutmeg
1 tsp cinnamon
6 large eggs at room temperature
1 1/2 cup buttermilk
1 cup flour
1/4 cup sugar
1 tsp vanilla
1/2 tsp salt
Confectioners sugar to garnish
Preheat oven to 375 F
Place butter in pyrex and melt in oven
Arrange apples over butter and return to oven for 10 mins or until apples are soft
Combine brown sugar, nutmeg and half the cinnamon
Remove pan from oven and sprinkle apples with brown sugar mix
Set aside
Combine eggs, buttermilk, flour, sugar, vanilla, salt & remaining cinnamon. Mix with electric mixer. Pour over apples.
Bake for approx 35 mins or until golden brown.
Sprinkle icing sugar over casserole and serve
