1-whole chicken, washed and dryd
2-3 onions sliced
1 cup Apple Honey (any honey will do)
salt and pepper to taste
1-2 Tbsp. or dried rosemary
1-2 oranges
3 tbsp of olive oil
1 tbsp flour
1 1/2 tbsp of butter
Preheat oven to 350
Clean and dry chicken
Slice onions and place on bottom of shallow roasting pan
Cut oranges places orange slices inside chicken cavity and take 1 slice and squeeze into bowl
In that same bowl combine s/p, olive oil, honey and rosemary. Stir
Rub cleaned, dried chicken with mixture and put some in between skin and breast of chicken..reserve a little for basting chicken
Cooking time approximately 45-90 mins..depends on size of chicken and oven..when done meat thermometer should be at an internal heat of 170.
Every 20 mins baste chichen with juices from pan and reserved liquidsm when chicken is done take out of pan and let rest while you make the gravey from the pan drippings
Take pot put butter and flour into pot heat until bubbly and melted slowly add pan dripping to flour mixture..whisk with fork to avoid lumps…cook on medium heat, stir frequently, for approximatly 10 mins, add salt and pepper to taste.
Cut chicken as you wish and serve with gravy.
