Dry Mixture
2 cups Flour
1 1/2 tsp Baking powder
1/2 tsp Baking soda
1 tsp Salt
3/4 cup Coarsely grated cheddar
Moist Mixture
1/2 cup Butter
2/3 cup Granulated sugar
2 large Eggs
1 cup Apple grated
Preheat oven to 350 F. Combine first 4 ingredients of dry mixture in a bowl, Add grated cheddar, Cream butter and sugar together with an electric mixer, Add eggs one at a time and blend. Peel, core and grate apple and add to moist mixture
Add moist mixture to dry mixture and stir until combined
Fill 12 prepared muffin cups 2/3 full
Bake 20 to 25 minutes or until springy to touch
