1 medium onion
1 full head of broccoli (cut into small/medium pieces, stems and florets)
1 medium apple
3-4 tbls butter
4 cups chicken stock
Sour cream to garnish if desired
1. Cut onion into rings or half rings and saute in a large pot with butter until soft and translucent.
2. Add the apple and saute for another two minutes.
3. Add all the chicken stock and the broccoli
4. Bring to a boil and cook for a good 10-14 minutes, until the broccoli is fully cooked and soft
5. Add entire pot contents to a blender or food processor and puree until smooth.
6. Put the pureed soup back in the pot and serve, with a dollop of sour cream in each bowl if desired.
