1 3/4 cups milk
1/2 cup minute rice
2 tbsp each: sugar, raisins
1/4 tsp salt
1 egg
1/4 tsp vanilla
dash nutmeg
Pour milk, rice, sugar, raisins into a sauce pan.
Bring to a boil, stirring constantly. Reduce heat and simmer un-covered for 6 minutes. Stirring occasionally. Blend egg, vanilla and nutmeg together in a bowl. Gradually stir a small amount of hot rice mixture into egg mixture. Return to sauce pan, cook and stir over low heat for 1 minute. DO NOT BOIL! Remove from heat and let it stand for 30 minutes. Serve warm or cold. Sprinkle cinnamon for garnish.
