6 eggs
1/4 cup milk
1/2 red bell pepper, finely diced
Red onion, finely diced
1/4 cup sharp cheddar cheese
salt & pepper to taste
Preheat oven 350 degrees
Dice the red bell pepper and the red onion. Cook in a frying pan until onions are translucent. Drain excess liquid and remove from heat.
In a separate bowl, whisk eggs, milk and salt/pepper together. Add cooked vegetables and mix.
Pour into greased muffin tins, bake approx 20-25 minutes (until eggs are fluffy and slightly golden on top)
