3/4 cup cooked quinoa
1 green pepper
1 red pepper
1 red onion
… 4 radishs
6 cherry tomatos
1 medium tomato
1 avocado
1 cucumber
10 green beans
1 can kidney beans
1/3 cup parsley
(amount of ingredients can vary to taste)
Dressing
3/4 cup olive oil
1/2 cup vinegar (1/4 cup balsamic, 1/4 cup rice vinegar)
1 Tbs lemon juice (freshly squeezed)
3-4 crushed garlic cloves
1 tsp salt
1 tsp dry mustard
(Blend ingredients together)
Chop all veggies into bite-sized cubes and dice together with cooked quinoa and dressing.
