Pineapple Banana Muffins

Dry Ingredients
3 cups All Purpose Flour
2 cups Granulated Sugar
1 cup Nuts or Raisins (optional)
1 tsp Baking Soda
1 tsp Salt
1 tsp Cinnamon

Moist Ingredients
3 eggs
2 cups mashed banana’s (about 5 med)
1 can (398ml) crushed, undrained pineapple
1 cup Vegetable Oil

- in LARGE Bowl, stir together all the dry ingredients
- in separate bowl beat eggs, all other moist ingredients until blended
- add moist ingredients to dry and stir until moistened

Spoon into large greased muffin cups about 2/3 full

Bake in 350F oven for 20-30 min or until tops are firm to the touch
