Chicken Stir Fry


3/4 cup chicken broth

1/4 cup soy sauce

1 small white onion, diced

1 tablespoon cornstarch

1 box of mushrooms

1 red pepper

2 sticks celery

1 clove garlic

1 Broccoli

2 boneless chicken breasts

2 cups Uncle Ben’s white rice

2 tablespoons cooking oil

Preparation:

Cook chicken in the over for 20 min or until done. Cut into pieces.

In a bowl combine chicken broth cornstarch andsoy sauce. Set aside.

Heat the oil in a skillet. Add the onions, mushrooms, pepper, cellery, cook for 3-4 min. Add the garlic.

Add the broth mixture, chicken then the broccoli. Cover and let broccoli cook on medium heat for 6-7 minutes or until done. Serve over bed of rice.
