Carrot Cake


Carrot Cake

Combine in a bowl:

1 cup sugar
1 tsp baking powder
1 cup flour
½ tsp baking soda
¼ tsp salt
¾ tsp cinnamon

In another bowl:
Beat 2 eggs very well.
Add ½ cup vegetable oil
1 cup grated carrots
2 to 3 tbsp crushed pinnaple

Add dry ingredients

Bake in loaf pan 350 F 50 minutes

Frosting
Mix 4 oz cream cheese
Add 2 cups sifted icing sugar
1 tbsp milk or until spreading consistency
