2 large chicken breasts
Salsa
2 cups sharp cheddar cheese, grated
1 pack large soft flour tortillas
Salt and pepper to taste
Sour Cream
To prepare the chicken, cut into strips and season with salt and pepper. Place in a skillet on medium heat and stir until chicken is cooked through. Spread a circle of salsa on the tortilla, then layer the chicken and cheese. Fold in half. Put a little oil in the skillet, heat and cook the quesadilla, flipping it once to brown and melt the cheese. Serve hot with sour cream to dip and a side of Mexican rice or a nice green salad.
