Fruit Pudding Cake


Fruit Pudding Cake

2 cups flour
1 1/2 cups sugar
2 tsp baking soda
1/4 tsp salt

Sift together above ingredients. Add:

2 eggs (beaten)
1 – 16 oz can fruit cocktail including juice

Mix well. Pour into greased and floured 8 or 9″ tube pan. Bake at 350 for one hour.


Pudding Icing

1/2 cup margarine
1 cup icing sugar
1/2 cup evaporated milk
1 egg yolk

Place in heavy saucepan and bring to a boil. Cook 2 minutes sitrring constatnly. Add remaining ingredients.

1 Tbsp vanilla
1/2 cup chopped nuts

Cool slightly and put on top of warm cake.
